  • Pinch of salt
  • 1 large egg
  • Everything bagel seasoning, for topping

For the Egg

  • 1 tbsp mayo

  • Louisiana hot sauce

How To Make It

Instructions

1. Make the Flax “English Muffin”

  • In a small microwave-safe dish, combine the ground flaxseed, baking powder, salt, and one egg.
  • Mix until you have a thick, even batter.
  • Sprinkle the top with everything bagel seasoning.
  • Microwave for 90 seconds, or until firm.
  • Once cooked, remove from the dish, slice in half, and toast lightly for texture.

Tip: Any small round dish works — it shapes the “muffin” perfectly.

2. Make the Egg Layer

  • Using the same dish (lazy girl rules, minimal cleanup), whisk together the mayo and second egg until smooth.
  • Microwave for 60 seconds, or until fully set.
  • Slide the cooked egg onto your toasted flax muffin.

3. Assemble Your Sandwich

I layered mine with:

  • Chipotle mayo
