Ingredients

For the Roasted Sweet Potatoes:

  • 1 medium-large sweet potato, diced
  • Olive oil
  • Freshly cracked pepper
  • Salt
  • Paprika
  • Italian seasoning

For the Crunchy Chickpeas:

  • 1 large can of chickpeas, strained, rinsed, and patted dry
  • Olive oil
  • Za’atar
  • Falafel spice
  • Garlic powder
  • Freshly cracked pepper
  • Salt

For the Salad:

  • Radishes, halved and sliced
  • Pickled turnip, diced

Instructions

1. Preheat the Oven:
Preheat your oven to 375°F (190°C).

2. Prepare the Sweet Potatoes:

  • Dice the sweet potato into bite-sized pieces and place in a mixing bowl.
  • Drizzle with olive oil and season with freshly cracked pepper, salt, paprika, and Italian seasoning. Toss to coat evenly.

3. Prepare the Chickpeas:

  • Coat the chickpeas with olive oil, za’atar, falafel spice, garlic powder, freshly cracked pepper, and salt. Toss to combine.

4. Roast the Vegetables:

  • Spread the diced sweet potatoes on one sheet and the chickpeas on another, ensuring they’re in a single layer.
