This Lasagna Soup gives you everything you love — richness, coziness, warmth — but in one simple pot.
It’s lighter than a traditional lasagna, completely beef + pork free, and made with rotisserie chicken for maximum ease.
You can go full Lazy Girl using store-bought chicken broth and canned tomatoes, or elevate it with your own homemade stock and fresh aromatics. Either option tastes amazing — choose what aligns with your energy.

What You’ll Need
Ingredients
(Serves 4–6)
For the Homemade Chicken Stock (Optional but Elite)
- 1 leftover Costco rotisserie chicken carcass (breast meat previously removed for another meal)
- Water, to cover
- 1 tsp whole peppercorns
- ½ tsp coriander seeds
- 1 tsp Italian seasoning
- 1 medium onion, halved
- 1 dried chili (optional)
- 2–3 cloves garlic
- Salt, to taste
For the Lasagna Soup
- 1 tbsp olive oil (or ghee)
- 1 medium yellow onion, diced
- 3 tbsp minced garlic
- 2 medium tomatoes, diced
- 1 jar (23 oz) passata (or 1 can crushed tomatoes)
- 4–5 cups chicken stock (homemade or store-bought)
- 2 cups shredded rotisserie chicken
- 8–10 lasagna noodles, broken into bite-sized pieces (or pasta of choice)
*I diced all my veggies using a vegetable chopper to save time.
Seasonings
- 1 tsp Italian seasoning
- ½ tsp dried basil
- ½ tsp oregano
- ½–1 tsp garlic powder
- ½ tsp paprika
- ¼ tsp chili powder
- ¼–½ tsp chili flakes (optional)
- ½ tsp ground sumac (optional)
- ⅛ tsp nutmeg (optional)
- ¼ tsp coriander powder (optional)
- Salt + pepper, to taste
Toppings
- ½ cup ricotta, stirred in at the end
- ¼ cup shredded parmesan, for garnish
- Fresh basil, for garnish
How to Make the Homemade Stock (*Optional)
If you want the coziest, richest version, start here.
Otherwise skip to the soup — the Lazy Girl hack is using a carton of chicken broth or bone broth.
- Place the leftover rotisserie chicken carcass in your Instant Pot.
- Cover with water.
- Slow cook for 5 hours.
- Add peppercorns, coriander seeds, salt, Italian seasoning, onion, dried chili, and garlic.
- Slow cook 2 more hours.
- Strain into a separate container.
- Pick off any leftover chicken you want to use in the soup.
Deep, golden, and so flavourful.
How to Make the Lasagna Soup
1. Sauté the Base
- Heat olive oil (or ghee) in the same Instant Pot or a large pot on the stove.
- Add diced onion and sauté until soft.
- Stir in the minced garlic and cook 30 seconds.
2. Add Tomatoes
Add your diced tomatoes and let them soften slightly.
3. Build the Broth
- Pour in the jar of passata.
- Add 4–5 cups chicken stock (homemade or store-bought).
- Stir well.
4. Season Everything
Add all dried seasonings:
- Italian seasoning
- basil
- oregano
- garlic powder
- paprika
- chili powder
- chili flakes
- sumac
- nutmeg
- coriander powder
- salt and pepper
Simmer 5–10 minutes.
5. Add the Noodles
- Break lasagna noodles into pieces and drop them in.
- Simmer until al dente, stirring occasionally to prevent sticking.
6. Add the Chicken
- Stir in shredded rotisserie chicken.
- Warm through 2–3 minutes.
7. Finish the Soup
- Turn off heat.
- Stir in ½ cup ricotta so it melts into the broth and makes it creamy without cream.
8. Serve
Ladle into bowls and top with:
- Shredded parmesan
- Fresh basil
