Let’s be honest: sometimes you want something hearty and healthy without spending an hour chopping, sautéing, and babysitting a pot on the stove. That’s where this roasted vegetable soup comes in. It’s a one-dish wonder — perfect for lazy days, tired evenings, or whenever you want a hug in a bowl with very little effort.

This soup is simple, satisfying, and makes your whole kitchen smell like autumn. It's the kind of recipe you can throw together, roast while you do something else, and then blend into creamy perfection. Minimal chopping, minimal dishes, and maximum flavour.

What You’ll Need:

  • 1 large yellow onion, loosely chopped
  • 2 bell peppers (any colour), chopped
  • 6 vine tomatoes, quartered
  • 1 bulb of garlic
  • 1–2 tbsp olive oil (be generous!)
  • 1 tsp Herbs de Provence (or use Italian seasoning)
  • ½ tsp dried oregano
  • ½ tsp thyme
  • Salt, to taste (I used more than usual since my chicken stock is low-sodium)
  • Cracked black pepper (optional — I skipped because my pepper mill broke!)
  • 3–4 cups chicken stock (or enough to cover the roasted veg in the pot)


How To Make It (The Lazy Way):

1. Roughly chop your onion, peppers, and tomatoes.
Toss them into a large casserole dish or roasting tray lined with tinfoil (this step is clutch for easy cleanup).

2. Add your garlic.
Cut the top off a whole bulb of garlic, drizzle generously with olive oil, wrap it in tinfoil, and nestle it into the center of your dish.

3. Season and roast.
Drizzle everything with olive oil, sprinkle on your dried herbs, salt, and pepper (if you’ve got it). Roast at 400°F (200°C) for 45–60 minutes, until soft and golden.

4. Blend it up.
Let the tray cool for a few minutes. Squeeze the roasted garlic into a medium pot. Scrape in all the roasted veggies and juices. Add chicken stock to cover and blend with an immersion blender. Add more stock to thin, if needed.

5. Heat and taste.
Bring the soup to a gentle boil. Taste and adjust seasoning — maybe a pinch more salt or a splash of lemon if you want brightness.


To Serve:

Spoon into your coziest bowl, add a drizzle of olive oil, a crack of salt or pepper, and pair with:

  • Grilled cheese
  • Toasted sourdough
  • Crackers, biscuits, or buns
