It looks like something you’d order at a restaurant, but it’s secretly just a fridge-cleanout dinner with a handful of staples. This is the kind of meal you can throw together in under 30 minutes, and it’s endlessly customizable. Swap in whatever veggies you’ve got, add tofu or chicken instead of shrimp, or go heavy on the spice if that’s your thing.

What You’ll Need:
- Vermicelli noodles
- 1 cucumber, diced
- 1–2 cups lettuce, chopped
- 3–4 radishes, thinly sliced
- 1 red pepper, sliced
- 8 frozen shrimp (cooked and topped with Japanese BBQ sauce)
- 1 tbsp sesame seeds, for garnish
For the Sauce:
- 2–3 tbsp leftover peanut satay sauce (or start fresh with your own)
- 1 heaping spoonful natural crunchy peanut butter
- ½ tsp garlic powder
- ½–1 tsp red pepper flakes (adjust for spice)
- A squeeze of sriracha
How To Make It:

Cook your noodles.
Bring a pot of water to a boil. Add vermicelli noodles and cook according to package instructions. Drain and set aside. -
Chop the veggies.
Dice cucumber, chop lettuce, slice radishes and red pepper. Keep them crisp and fresh — no need for perfection here. -
Whisk the sauce.
In a small bowl, mix together the leftover peanut satay sauce, peanut butter, garlic powder, red pepper flakes, and sriracha. Adjust until the flavor and texture feel right for you — creamy, spicy, and rich. -
Sauce the noodles.
Toss cooked noodles with about ¾ of your peanut sauce until evenly coated. -
Cook the shrimp.
In a pan, quickly cook frozen shrimp. Once warmed through, drizzle with Japanese BBQ sauce for a sweet-savory glaze. -
Assemble your bowls.
Add the sauced noodles to a bowl. Drizzle a little extra sriracha. Top with lettuce, red peppers, cucumbers, and radishes. Drizzle the remaining peanut sauce, sprinkle sesame seeds, and finish with your shrimp on top.
