  • 2 carrots, julienned

  • 1 small onion, sliced
  • 1 red pepper, sliced
  • 1 cup frozen broccoli
  • Chopped fresh coriander (for topping)
  • Peanuts (for topping)
  • Sesame seeds (for topping)

Instructions

1. Prepare the Noodles:

  • Bring a pot of water to a boil and cook the shrimp egg noodles according to the package instructions. Drain and set aside.

2. Prepare the Sauce:
In a small bowl, whisk together soy sauce, ginger paste, garlic paste, miso paste, sesame oil, oyster sauce, lime juice, red pepper flakes, cracked pepper, garlic powder, chicken stock, and sesame seeds. Set aside.

3. Cook the Vegetables:

  • Heat a wok over medium to high heat and add 1 tablespoon of sesame oil.
  • Add the sliced onions and cook for 2–3 minutes until slightly softened.
  • Stir in the diced celery and cook for about 5 minutes.
  • Add the julienned carrots and cook for 2 more minutes, stirring frequently.
  • Add the sliced red pepper and frozen broccoli, and stir-fry for another 2 minutes until the vegetables are crisp-tender.

4. Combine with Sauce and Noodles:

  • Pour the prepared sauce over the vegetables, stirring to coat everything evenly.
  • Add the cooked noodles to the wok and toss until the noodles are heated through and fully coated with the sauce.

5. Garnish and Serve:

  • Divide the noodles into bowls and top with fresh coriander, sesame seeds, and peanuts for a crunchy, flavourful finish.
  • For an extra kick of spice, feel free to top with sriracha or crispy chili oil—a perfect way to elevate the heat!
