These Yogurt Granola Breakfast Cups are the kind of recipe that makes breakfast feel way more fun than it has any right to be.

They’re made with a simple homemade granola base, pressed into muffin cups, baked until golden, and filled with yogurt once cooled. Think parfait, but cuter. Think brunch bite, but still practical. How To Make It

1. Preheat your oven
Preheat your oven to 325°F and lightly grease a muffin tin.

Slightly blend the granola into smaller pieces. You don’t want it to turn into flour, just small enough that it can press together and hold its shape.

3. Warm the wet ingredients
In a small saucepan or microwave-safe bowl, warm the nut butter, coconut oil, and honey or maple syrup until smooth and easy to stir.

4. Mix with the granola
Pour the warm nut butter mixture over the granola and mix until everything is evenly coated.

5. Shape the cups
Portion the granola mixture into the muffin tin. Press each one firmly into a cup shape, keeping the centre lower than the sides so there is room to add yogurt later.

6. Bake
Bake at 325°F for 20 minutes, or until golden and set.

7. Cool completely
Let the granola cups cool completely in the muffin tin before removing. This helps them firm up and hold their shape.

8. Fill and serve
Once cooled, fill each granola cup with yogurt and top with fresh fruit.

Serve at your next brunch or keep in the fridge for an easy quick breakfast.

Note: Press the granola mixture firmly into the muffin tin so it holds its cup shape. Let the cups cool fully before adding yogurt, otherwise things get melty and chaotic.
