Let’s just say it: sometimes gluten-free bread is dry and tastes like sh*t 💩
It’s either crumbly, weirdly dense, or has that “why is this sweet?” thing going on.
So I started making this instead.
This is my 3-minute, microwave gluten-free “English muffin” made with flaxseed. It’s warm, filling, and actually gives “real breakfast” energy without the sad GF bread experience. No oven, no waiting, no stress.
This recipe is so versatile — use it for a breakfast sandwich, as the base for eggs benny, or keep it simple and spread some nut butter on top.


What You’ll Need
Ingredients (Serves 1)
For the “English Muffin”
- 4 tbsp ground flaxseed
- 3/4 tsp baking powder
- Pinch of salt
- 1 large egg
- *Optional: Everything bagel seasoning, for topping
How To Make It
Instructions
1. Mix the batter
In a small microwave-safe dish, mix the flaxseed, baking powder, and salt.
Add the egg and stir until you have a thick batter (no dry spots).
2. Season it (*optional)
Sprinkle everything bagel seasoning on top because it makes it taste way more legit.
3. Microwave:
Microwave for 90 seconds on high.
4. Slice + toast (*optional but HIGHLY recommended):
Let it cool for 30–60 seconds, pop it out, and slice in half.
Toast the cut sides if you want a better texture (highly recommend — it’s the glow-up).
Tip: Any small round dish works — it shapes the “muffin” perfectly.
